About the Bakery

Roger Bransol was born in Lyon, France. He began his apprenticeship at the age of 13, learning the classic style & technique of baking and pastry arts. His career took him to Cannes, Nice, Gras, Tahiti, and finally to New York City, where he opened his first American venture in 1989. Our signature cake Tropezienne, which originated in St. Tropez, is the company’s namesake. Though it has now expanded, the bakery still stands in its original location, twenty seven years later.

Today we use traditional baking methods and Roger’s time tested recipes from the south of France, which he passed on to his many apprentices. His personally trained staff of two decades, bakes breads, croissants, brioche, & pastries daily, by hand and from scratch. We use only the finest ingredients, to ensure quality and integrity in all of our products. Over the years our menu has expanded to include sandwiches, paninis, salads, soups, quiche, cookies and cakes.

Roger passed in May of 2011. Our goal is to honor him by keeping his legacy alive, providing the neighborhood and other small businesses with food we can be proud of. We hope you will come in and see for yourself.
